Valentine's Day is right around the cornerĀ šĀ EEK! I am super excited and you know what? Valentine's Day does not have to be a big expensive show out. I think the best way to show someone how much you love them is to listen to them, spend time together, and do something thoughtful for them!

Definitely! Making them at least a couple of hours before you intend to gift them or eat them is best anyhow because you want to give the chocolate enough time to harden. But don't try and shortcut the process by sticking them in the freezer. You don't want your strawberries to get frozen! They won't taste good if they are mushy and watery after thawing out. But you canĀ harden them in the fridge for 15-30 minutes, then take them out to sit at room temperature.
Store them in a cool, dry place, uncovered, on a parchment-lined baking sheet. They can be left out at room temperature for up to 10 hours.
Yes, you'll want to set and store your chocolate covered strawberries at room temperature. The most important thing is to make sure they are patted completely dry after washing. You don't want any residual water to get into the melted chocolate, it will ruin it!

Wash and dry the strawberries.
To prepare your workspace,Ā line a baking tray with parchment paper. This is to place the dipped strawberries on.
Melt the chocolate in a double boiler or the microwave. Your melting chocolate package should have additional instructions. But your microwave instructions for melting the chocolate wafers will probably be similar to this:Ā Heat the chocolate for 30 seconds on medium-high. Remove from the microwave and stir with a rubber spatula.Ā Return it toĀ the microwave and heat for 15-second intervals, stirring in between intervals with your spatula. Continue this process until the chocolate is completely melted and has a smooth texture with no lumps of unmelted chocolate remaining.
Dip each strawberry in the melted chocolate.
Lay the strawberries on the prepared baking sheet and allow them to rest until the chocolate has set.
Drizzle with melted white chocolate if desired.
You can use a toothpick to vary the drizzled design.
Try dipping some strawberries in the white chocolate and then drizzling with chocolate for an alternating design!Ā
